Granitic

D.O. Maule - Carignan, Garnacha, Syrah.

Origin

The grapes come from the Carrizal vineyard, located in the Melozal sector within the Maule Region. This organic vineyard is nestled in the foothills of the Coastal Mountain Range, in a privileged area with deep soils formed by the decomposition of the central batholith, which transforms into granite and then into smaller and finer pieces, creating low-fertility soils. These unique characteristics, combined with limited irrigation, result in low-vigor vines with an average yield of only 7 tons per hectare. The vineyard has a southeast orientation, ensuring excellent sun exposure throughout the day. This combination allows for slow ripening, which guarantees exceptional and distinctive quality in the final product.

Vinification

The clusters were carefully harvested by hand to preserve the grapes’ pristine quality. A 3-day cold maceration using 10% whole clusters enhanced the wine’s freshness, structure, and aromatic complexity. Fermented in open stainless-steel tanks with gentle manual punching down for 15 days, the wine gracefully captures the essence of the grape skins. It was then aged for 24 months in 225-liter French oak barrels, followed by 36 months in tanks, achieving remarkable depth and elegance.

Tasting notes

Clean and bright, with a medium ruby color transitioning toward garnet hues. On the nose, it is fresh and layered, offering excellent aromatic intensity. The profile reveals fresh red fruit and fig from the Garnacha, complemented by herbal notes, pepper, and floral hints contributed by the Syrah.

Pairing

A versatile wine, perfect for pairing with well-marbled red meats, Iberian cured meats, a wide range of cheeses, pastas, or risottos. Serve at 16-18°C.

Conservation recommendation

To enjoy now or after years of aging. Store in a cool, dark place (up to 20°C) and avoid sudden temperature changes.
